Comfort Foods & Cravings

Being vegan can be hard. People are always telling me they couldn't do it because they couldn't give up ______.

One of my favorites, Mac & Cheese. I actually prefer this dish vegan style. If you are raining an eyebrow right now, try an be open minded. This recipe is super simple and tasty!

Vegan Pumpkin Mac & 'Cheese' For One

 Ingredients:

1 cup of pasta

1/4 cup pumpkin puree

2 tablespoons unflavored vegan half & half*

2 tablespoons vegan cream cheese*

1 tablespoon vegan butter*

2 dashes tumeric

Salt to taste

Instructions:

Cook pasta.

Stove top: Put rest of ingredients in a sauce pan and cook on low. Pour over pasta. Stir & enjoy!

Easy Mac style: Put pasta in a microwave safe dish. Put rest of ingredients over pasta. Microwave for about 30 seconds. Stir & enjoy!

Notes: 

*Ripple has no sugar, so it gives a neutral taste.

*I used Tofutti and Earth Balance
