So, I still have 1 cup of pumpkin puree left...

The possibilities are endless. I may sound like the "stereotypical white girl," but pumpkin is a great tool for vegan cooking and baking.

Vegan Pumpkin Spice Protein Waffles:

Ingredients:

1/3 cup of oat flour*

2/3 cup of cashew milk

1 scoop Orgain or Think Thin vanilla protein powder*

1-2 tablespoons granulated sweetener (optional)

1/2 tablespoon baking powder

1/4 cup pumpkin puree

1 dash of pumpkin pie spice 

1/4 teaspoon vanilla extract (optional)

Instructions:

Mix dry ingredients. In a separate bowl, make your vegan egg. Stir wet ingredients with egg. Combine bowls and stir until mixture is clump free.

Grease waffle maker well. Spoon out batter into the maker. Cook and enjoy!

This batter makes great Pancakes as well.

Notes:

*can use white or wheat flour if not gluten-free. Oat has a nice flavor and texture. Can use other gluten-free flours, but some (such as coconut flour) are not good substitutions due to texture.

*Orgain & Think Thin are my recomendations because they are allergy/ animal friendly and they don't get rubbery
