The Best Blondies Ever

So, I made the best blondies ever. Vegan Cashew Butter Blondies...

These are amazing! Super fudgy and almost healthy.

They are pretty versatile too. Drizzled with agave syrup, the make an awesome breakfast:

Smeared with cashew butter and jam, they make a great lunch.

And with a dollop of vegan frosting, my new favorite dessert. Clearly I'm addicted.

Vegan Gluten-Free Cashew Butter Blondies

(Serves 8 to 10)

Ingredients:

1/2 cup cashew milk

1/8 cup unflavored vegan half & half*

3/4 cup cashew butter

2 tablespoons agave syrup

1 1/2 teaspoons vanilla

3/4 cup oat flour

2 tablespoons coconut flour

1/2 cup granulated sweetener

1 vegan egg*

1/4 teaspoon salt

1/4 teaspoon baking powder

2 tablespoons cornstarch

Instructions:

Preheat oven to 350. Make sure cashew buttet is not refrigerated.

Mix dry ingredients in one bowl. Make neat egg in small dish.

Mix wet ingredients in separate bowl. Stir neat egg into wet ingredients.

Slowly combine wet with dry. Stir until batter is clump free.

Put batter into a well greased pan. Bake for 22- 24 minutes or until center is no longer gooey. Enjoy!
