Lazy Cookie Bars

I was on a time crunch, but really craving something homemade. These cookie bars are as simple as you can get and take all of 25 minutes. 

Have you ever had Biscoff cookie butter? If not you are missing out. It is the texture of peanut butter with the flavor of a Biscoff cookie. 

This forms the base my cookie bars. Because cookie butter already tastes like cookies, we are over half way there.

Biscoff Cookie Butter Bars

Ingredients:

1 1/4 cups of creamy Biscoff cookie butter

1 1/4 cups of oat flour* 

1/4 cup of maple syrup 

2 vegan eggs*

1 tablespoon of baking powder

1 teaspoon of vanilla extract

Instructions:

Preheat oven to 350. Mix dry ingredients in one bowl. Create your vegan egg in separate bowl. 

Put cookie butter in separate bowl. Heat it in the microwave for about 30 seconds or until it is drippy. Mix in maple syrup. 

Combine wet ingredients with dry. Press dough into a well greased brownie pan. Bake for about 10 minutes or until center is no longer gooey. 

Eat.

*can sub with white or wheat flour
