It's not surprising that a person could make a healthy, tasty brownie. I don't typically do healthy though...

So these brownies are kind of massive. I turned a 9 X 9 inch brownie pan into 4 brownies. I don't feel guilty though. They only have about 250 calories a peice.
These brownies were accidentally healthy. It really was due more to a time crunch. I had 30 minutes before I had to leave for work and an insatiable brownie craving.
Healthy Flourless Dark Chocolate Pumpkin Brownies
Ingredients:
1 cup of pumpkin puree
1/2 a cup of drippy cashew butter*
1/4 cup of unsweetened cocoa powder
A handful of Lily's* dark chocolate chips for garnish
Instructions:
Combine all ingredients in a bowl except chips. Spread evenly onto a well greased brownie pan.
Bake for 15-18 minutes. Let them sit for 5 minutes. Garnish with chips.
Enjoy!
Recipe Notes:
*can use other nut butters. If nut butter is not drippy, microwave for about 20 seconds.
*Can use other dairy-free chocolate chips. If eliminating chips altogether, you might want to add a little sweetener.
