Vegan Matzoh Brie

In my family, matzo is eaten all year long. Just butter and salt is all my mom needed. My favorite way is matzoh brie.
For those unfamiliar, matzoh brie is basically French toast made out of unleavened bread. It is typically served with apple sauce. I always ate mine with butter and sour cream.
As a vegan, this presents a major obstacle. The butter and sour cream are easy thanks to Earth Balance stick butter and Tofutti sour cream. What can I do about the egg though? My Neat eggs and flax eggs are good for binding baked goods, but are not going to work for this dish.
Aquafaba. It is the brine from the can of chick peas. It works beautifully in French toast as well as baked goods. It is both cheap and healthy.

Ingredients:
3 sheets of matzoh
The brine from 1 can of chickpeas
2 tablespoons of Earth Balance butter
Tofutti sour cream or apple sauce to taste
Salt to taste
Instructions:
Run matzoh under warm water until it gets soft. Put into bowl with aquafaba. Let it absorb the aquafaba for approximately 10 minutes.
Cook in a pan on stove top on medium heat with vegan butter until it firms up and becomes slightly golden.
Serve with condiments of choice. Enjoy!
