Better Than Cream of Wheat

As a kid, my Dad made the best cream of wheat. He used Quaker Cream of Wheat, whole milk, butter, lots of sugar, and love. Sugar and love are still vegan.

Creamy Breakfast Polenta (single serve)
Ingredients:
1 cup of dairy-free milk*
1/4 cup of corn meal*
1 tablespoon of vegan buttery spread* or coconut oil
1/8 teaspoon of vanilla (optional)
1 tablespoon of sugar or 1 packet of Stevia
Instructions:
Cook 'milk' on low heat in a sauce pan. Add cornmeal.
Mixture will thicken very quickly. Remove from burner when it hits desired level of thickness.
Pour in bowl. Add 'butter'/oil, sugar, ect.
Enjoy!
Recipe Notes:
*To make extra creamy, do a combo of cashew milk and ripple half & half
* I used Bob's Red Mill
*I used Earth Balance
